I was studying for my exams and needed a quick break and some grub. I love red beets. I mean, seriously: I love red beets.
I love everything about them.
Did I mention that
I LOVE RED BEETS?
What to do:
1. Grab a red beet
2. Chop it.
2. Chop it.
3. Boil it for 5-8 minutes.
4. Add ground cumin.
5. Drain the beets by saving the "soup" in your favorite cup.
6. Chop fresh spinach and a bit of broccoli. Add to the mix.
7. Sprinkle with organic avocado oil, salt & pepper
8. Find some frozen berries in the freezer, add a couple of spoonfuls of coconut milk and VOILA:
A three course dinner!
